- Bring a large pot of salted water to a boil and cook the pasta according to the package until al dente. Before draining, reserve 1 cup of the pasta water.
- While the pasta cooks, warm the olive oil in a small skillet over medium heat and cook the garlic for about 30 seconds, just until fragrant. Set aside.
- In a blender, combine the cottage cheese and milk. Blend on high for 15 to 30 seconds, until completely smooth with no visible curds.
- Add the crushed tomatoes, parmesan, cooked garlic, Italian seasoning, salt, and pepper to the blender. Blend again until smooth.
- Return the sauce to the same skillet over low to medium heat and warm it gently, stirring often. Don't let it come to a hard boil, high heat can cause the cottage cheese to separate.
- Add the drained pasta to the skillet and toss to coat, adding reserved pasta water a tablespoon at a time until the sauce clings the way you want it to.
- Serve immediately with extra parmesan on top.
Notes
- I blend the cottage cheese thoroughly. Any texture you can still feel is texture you'll taste, so I'd rather blend too long than not enough.
- I use full-fat or 4% cottage cheese because it makes a noticeably creamier sauce than a low-fat version, and it's less likely to separate when it hits heat.

Storage
Refrigerate in an airtight container for up to 3 days. Reheat gently on the stovetop over low heat with a splash of water or milk to loosen the sauce back up. Avoid microwaving on high power, which can cause the sauce to break.

Will this taste like cottage cheese?

Can I add protein to this instead of relying on the sauce alone?
